Olvidado este incidente, su popularidad fue meteórica cuando se puso aquel traje de cuero en "Mad Max" de George Miller, interpretando a un héroe de acción después del Apocalipsis, y en "Tim" (ambas en 1979), como un trabajador retrasado mental enamorado de Piper Laurie. Gibson se convirtió en una estrella rentable en Australia después de interpretar el drama de guerra de Peter Weir, "Gallipoli", y "El guerrero de la carretera", (ambas 1981), la continuación trascendental de "Mad Max". Esta última, una película de acción clásica, fue un gran acontecimiento internacional en 1982 y le convirtió en uno de los actores más taquilleros. Gibson regresó con Weir en "El año que vivimos peligrosamente" (1983.) Ahora es un reportero australiano que es obligado a permanecer en un país extraño durante los levantamientos políticos de Indonesia en 1960. La película volvió a convertir en una gran estrella a Gibson y tuvo varias secuelas en las que creó una extraordinaria caracterización de un héroe de acción moderno. Inmediatamente después realizó un cambio sorprendente en su carrera con su retrato del danés melancólico en "Hamlet" (1990) de Franco Zeffirelli. Aunque la película era problemática, Gibson logró proporcionar un retrato finamente recreado del famoso príncipe. Esta fue la primera película producida por Icon Production. Después de continuar con una historia más sentimental con "Eternamente joven" (1992), realizó su debut como director con "El hombre sin rostro" (1993), un drama en el que interpretó a una víctima de una quemadura. Después, ese mismo año, puso la voz al señor John Smith en "Pocahontas" de Disney, e hizo también su debut en la pantalla cantando. Con su compañía de cine Icon Production también ha realizado otros proyectos, incluso el biopic de Beethoven "Inmortal Beloved" (1994.)
