About the Book

Come mai scegliere due locuzioni tipicamente anconetane come titolo per una raccolta di racconti brevi, essenzialmente ambientati a Jesi e dintorni? Credo che i lettori che più o meno hanno la mia età o giù di lì abbiano colto al volo l'ironia che si cela dietro queste espressioni, legate sì a dei piatti tipici di Ancona e di Jesi, ma anche diretta suggestione dell'eterna rivalità tra le due cittadine e usate per pendersi in giro a vicenda in maniera goliardica e burlesca. Il "pane con l'olio" e il "riso con le ossa" erano piatti tipici della cucina povera marchigiana, il primo più in uso nella zona di Ancona e legato alla produzione dell'olio di oliva, il secondo più nelle zone di campagna dello jesino e del maceratese e legato alla pista del maiale. Ma quando uno jesino diceva a un anconetano "Pà cu' l'ojo" faceva riferimento alla tipica inflessione dialettale, che aveva la sua espressione più eclatante in questa breve frase. E di certo l'anconetano non si faceva sfuggire la battuta, per rispondere: "Senti chi ce parla! Quello che magna el riso sa l'ossi!" E anche qui c'era sì il riferimento al riso cotto nel brodo ottenuto dalla prolungata bollitura delle ossa di scarto del maiale, disponibili soprattutto in inverno, nel periodo della "pista", ma in particolare si prendeva in giro il modo di pronunciare la lettera "esse" da parte di noi jesini, che la sibiliamo quasi tra i denti, facendo fuoriuscire un suono dolce, anziché duro, come accade nel resto della regione, dando a volte alla pronuncia dialettale jesina un accento che ricorda da vicino il toscano.
Ma al di là di queste digressioni, direi quasi accademiche, l'intento di questo volumetto è quello di raccogliere in un'unica opera alcuni racconti brevi da me scritti nel tempo e pubblicati qua e là in varie antologie o talvolta in siti internet. Sono racconti ambientati a Jesi e dintorni, in epoche anche diverse, più antiche o più recenti, ma legate tra loro da un tema comune: raccontare il nostro territorio per non perdere le nostre tradizioni e le nostre origini. E sono convinto che ogni racconto, a seconda del tema o di come lo leggerete, vi strapperà un sorriso o una lacrima.
Non a caso, e lo scoprirete sfogliando le pagine del libro, ho voluto dividere il volume in quattro sezioni, intitolata ognuna a un elemento fondamentale della natura: aria, acqua, terra, fuoco. E ogni sezione sarà abbinata alla ricetta di un piatto tipico della nostra tradizione. Provate a realizzare una o più di queste ricette e, oltre la lettura, riuscirete a rievocare gli odori e i sapori tipici delle nostre case di un tempo che fu.
